I’m sure you’ve noticed that One Lazy Vegan has been quiet for some time. Well, as I near my one year anniversary of embracing the plant-based vegan lifestyle, I’ve also been very busy with some exciting new developments: I’m currently enrolled as a student at the Institute for Integrative Nutrition and building my new business Sweet Potato: Plant-Powered Health Coaching.
Mark your calendars! Compassion Over Killing is hosting it’s fifth annual US VegWeek on April 22-28. What a super fun way to connect and, according to the website, explore a wide variety of meat-free foods while discovering the many benefits of vegetarian or vegan eating—for our health, the planet, and animals.
Inspired by the idea of raising local awareness of the plant-based lifestyle, I set out to get a small local group of VegPledgers to track their week-long progress on One Lazy Vegan’s facebook page. Well, thanks to the excitement created, and the generosity of others, that has quickly snowballed into a week full of local events!
It’s been four months since my choice to embrace the plant-based lifestyle, and I’ve never been happier. I’ve spent some time reflecting. Why am I vegan? What does it mean? What does it mean to me? How do outsiders perceive my lifestyle choice? Do they understand? How can I help them understand? As I am settling in to my vegan comfort zone, these are all things on my mind.
What a difference 65 short weeks can make:
70 pounds lighter,
75 cholesterol points lower,
and 13 pants sizes smaller.
I sure don’t miss ’em!
These past few weeks have been really emotionally draining and stressful for me, as I first dealt with some unexpected drama involving an abusive rabbit “rescue” situation, then dealing with my own little bunny falling ill.
